I had how to make Miso class on 2/13 and I had one person to teach this class. Since I bought rice koji from Japan, this miso class is only available for few people who really wants to make own miso.
Soaked soy bean overnight
Cook soy bean in pressure cooker for 30 minute.
Rice koji mixed with sea salt
Grind cooked soy bean and mix with koji and salt, then fermented for one year.
This is one year old miso I made last year.
