Do you know Okara??? When I make soy milk, the left over soy protein is Okara/tofu lees which has soy protein & dietary fiber inside and very nutritious. We cook Okara with vegetables in Japan and this is very healthy dish.
Since I make soy milk at home for soy yogurt, I have homemade Okara regular basis. So I bake okara cake.
This time I tried NO butter okara cake and it turned out pretty good.
Cut for a serving. This is nice healthy snack for me and my son. When I make simmered black bean, I just put in the cake.
