Red Shiso leaf grew so tall now, taller than me. Started getting flowers.

After I made shiso juice, I made simmered shiso leaf with anchovies. This is furikake/rice garnish.

I made miso every year around this time. I would like to finish miso making before my trip to Europe.

Soak soy beans overnight.

Boil & mush them.

Mix fermented rice/Koji & salt.

Mix together and transfer into container.

2011/02/13 How to make Miso class

I had how to make Miso class on 2/13 and I had one person to teach this class. Since I bought rice koji from Japan, this miso class is only available for few people who really wants to make own miso.

Cook soy bean in pressure cooker for 30 minute.

Rice koji mixed with sea salt

Grind cooked soy bean and mix with koji and salt, then fermented for one year.

This is one year old miso I made last year.
